What you can and cannot extract
Audio attached to a Reel or video post can be extracted cleanly, and the result includes everything in the original mix: the music, the voiceover and any sound effects baked into the edit.
What cannot be extracted is the original licensed track from the platform’s own music library. That audio exists on the server only as metadata pointing at a licensed recording, paired with the creator’s video. The extracted MP3 is the mixed track as it plays in the post, which is what most people actually want anyway.
The conversion runs on your device
Most converters upload the video to a server, run FFmpeg there, and hand back the MP3. That costs bandwidth in both directions and puts a copy of the file somewhere you do not control.

Choosing a bitrate
The source audio has already been compressed by the platform, so encoding at an unnecessarily high bitrate only inflates the file. A 192 kbps MP3 is transparent for this kind of material and keeps file sizes reasonable. If you are planning to edit or mix the track, 320 kbps gives you slightly more headroom.
Respecting the music
Downloaded audio is for personal use: saving a favourite clip, transcribing an interview, keeping a reference for your own editing. Re-uploading someone else’s music as your own track is a copyright problem no matter how the file was obtained.
