Instagram keeps several copies of every photo
When someone uploads a photo, the platform generates a size ladder for it: a thumbnail for the grid, a medium version for the feed, and a full-size version for full-screen viewing and desktop. The app quietly swaps between them as you scroll. Screenshotting gets you your screen resolution, and long-pressing inside the app gets you nothing at all.

Why screenshots are a bad substitute
A phone screenshot is a re-photograph of a screen. It captures the UI chrome unless you crop it, it captures the photo at your display’s resolution rather than the stored resolution, and on OLED screens it can introduce colour shifts. For a reference image it is fine; for anything you want to keep it is not.
Saving a whole carousel
